Juniper berries is a core gin botanical used in craft and home distilling, characterised by pine, resinous, bittersweet, slight citrus, peppery finish, camphor. It plays defining ingredient; legally required as dominant flavour; the backbone of all gin. Most distilling recipes use 17 g/L of neutral as a sweet-spot starting dose; full dosing range and pairings below.
